here is what you will need: for the soup: 3 stalks organic celery (diced) 1 organic onion (peeled and diced) 1 head organic fennel (diced) 1 bulb or organic garlic 1/2 cup white wine 3lb organic potato (diced) 6 vegetable stock (i use 2 edward and sons veggie bouillon) 1 can of white beans (you can use dry, just prep them) lemon juice cooking spray for the brussels sprouts: 24 Brussels sprouts 1 tbsp organic butter 1 tsp lemon zest 4 cloves garlic 1/4 cup chopped parsley | here is what you will do: preheat 375 1.place large soup pot on the stove over medium heat. 2. spray with cooking oil add celery, onion, fennel. 3. sauté, stirring occasionally, until translucent and softened (about 10 minutes). 4. toss in garlic, stir for a minute on medium heat. 5. add wine. 6. stir and cook down until liquid evaporates (about a minute). 7. add potatoes and veggie stock. 8. bring to the boil and then turn down to a simmer. 9. cook until potatoes are tender (about 20 minutes). while this is happening, start on the brussel sprouts. refer to step 13. 10. chuck in white beans and simmer for another 20 minutes. 11. remove and puree half of the soup (or use an immersion blender). 12. add puree back to chunky soup. 13. while the potatoes are still cooking, start on the brussel sprouts. 14. trim stems off of Brussels sprouts and remove any brown outer leaves. 15. grate off half of each Brussels sprout. Set grated slaw aside. Don't worry if the intact halves look weird and not pretty. 16. heat butter in a pan on high heat until it just starts to brown. Place Brussels sprouts grated-edges down into the brown butter. 17. once they are nicely browned (a minute or so), spray with cooking spray and throw the pan into the oven. (or use a cooking sheet if you don't have a oven safe pan.) 18. cook until just tender (about 20-25 minutes). 19. remove from the oven and toss in grated Brussels sprouts slaw, lemon zest, garlic, parsley. 20. remove from oven, stir, and taste. Season as needed. garnish with cooked brussels sprouts/slaw and any of the optional toppings above. the soup freezes beautifully. |
