woahhh there, nellie! did you say chocolate and vegan in the same sentence?! yes, yes i did. thanks to the cocoa tree it is possible to satisfy your chocolate cravings and remain within the vegan parameters. this is wonderful news for me because i do love my sweets!
here is what you will need: (on the back it gives a list of ingredients to use but i used some alternatives to make them completely vegan) 1 bag of pamela's chocolate chunk cookie mix (i found it in the organic section at my local kroger, you can probably find it at safeway. fred meyer, meijer, whole foods, earthfare, or new seasons) you can source a pack of six of it on amazon as well here santa cruz organic apple sauce - about the equivalent to an egg earth balance coconut spread (you could also use the earth balance butter) | simply follow the directions on the back of the back on how to whip these bad boys up. i did decide to just put them into an 9" x 13" pan for the ease of it. |
they are about to come out of the oven and i am super ready to try one. i already licked the batter (it is safe since i did not use any egg.) and it was delicious. yum.
the verdict is in. between tyler (my boyfriend) and myself we finished the batch in two days. they are THAT good.
oh, and one of the (other) best things about these cookies is that there is about six grams of sugar in each cookie. (the reason i say about is because i substituted the apple sauce instead of an egg.)
